Manuel Ferreira, Chef Executivo do Grupo Art and Soul<\/strong>, nasceu em terras francesas e foi na cidade dos jesu\u00edtas, em Santo Tirso, que iniciou com 28 anos o seu gosto pela cozinha. O primeiro espa\u00e7o onde teve oportunidade de colocar em pr\u00e1tica as experi\u00eancias gastron\u00f3micas foi no restaurante dos seus pais.<\/p>

O percurso formativo arrancou na Escola Profissional de Mazag\u00e3o, em Braga, sob a tutela do Chef Martins<\/strong>, um dos primeiros formadores da Escola de Hotelaria e Turismo do Porto.<\/p>

Iniciou a sua atividade profissional num dos maiores grupos hoteleiros \u2013 Grupo Continental – como Cozinheiro, mas a necessidade de aprender novas t\u00e9cnicas e desafiar-se a si pr\u00f3prio levou-o, ao fim de dois anos, a rumar para novas paragens.<\/p>

Foi no Sheraton Porto Hotel & Spa que desenvolveu todo o seu potencial e absorveu todo o conhecimento e paix\u00e3o com algumas das maiores refer\u00eancias de Chefs: Jer\u00f3nimo Ferreira<\/strong>, Celestino Grave<\/strong>, Il\u00eddio Barbosa<\/strong>, Marlene Vieira<\/strong> e Pedro Sequeira<\/strong>.\u00a0<\/p>

Ao longo destes anos, todas as t\u00e9cnicas e novas tend\u00eancias da gastronomia foram colocadas em pr\u00e1tica, como a Cozinha Tradicional Portuguesa, Cozinha de Fus\u00e3o, Cozinha Molecular, Cozinha Oriental. O mentoring<\/em> destes profissionais de excel\u00eancia foi chave para que aceitasse um outro desafio, desta vez a solo. Desde 2015 que chefia a sua pr\u00f3pria Cozinha, no Restaurante Galeria do Largo (link)(pertencente ao Porto A.S. 1829 Hotel) \u2013 restaurante tradicional de rua. Em 2016, colocou os seus conhecimentos em pr\u00e1tica em mais dois hot\u00e9is do Grupo: apoiando a reformula\u00e7\u00e3o do Lisboa Carmo Hotel e a abertura do Lux Lisboa Park. Pontualmente, nos hot\u00e9is Lux F\u00e1tima Hotel e Lux F\u00e1tima Park \u00e9 solicitada a sua coopera\u00e7\u00e3o e coordena\u00e7\u00e3o em eventos especiais.<\/p>

No final de 2016, dois novos projetos redirecionaram a sua aten\u00e7\u00e3o para novos conceitos: o Mensagem Restaurante e Bar Panor\u00e2mico<\/strong> (Lisboa Pessoa Hotel), um conceito citadino e de fus\u00e3o, com dois rooftops sobre a cidade de Lisboa, o Castelo de S. Jorge e rio Tejo e o Mercearia Eborim<\/strong> (\u00c9vora Olive Hotel), onde se privilegia naturalmente a comida tradicional alentejana, onde \u00e9 Chef Executivo.<\/p>

Desde 2017 tem participado em diversas rubricas televisivas \u201cPau para toda a Colher<\/strong>\u201d das \u201cGrandes Manh\u00e3s<\/strong>\u201d, e mais recentemente na rubrica \u201cBom Garfo<\/strong>\u201d do programa \u201cAl\u00f4 Ricardo\u201d, ambos no Porto Canal.<\/p>
